Fish Tacos
Ingredients

olive oil

2 corn tortillas

white cod/tilapia filet, large dice

half avocado, diced
-
roma tomato, diced
-
lime, zest and juice

1 tsp garlic powder
-
small plain greek yogurt
-
1 chipotle pepper in adobo sauce, finely minced

cilantro, chopped
-
shredded cabbage
-
1/2 - 1 tsp cumin (preference on measurement)

1/2 - 1 tsp curry powder (preference on measurement)

salt/pepper
Directions
-
heat skillet and add 2 tbsp olive oil
-
season fish with salt/pepper; add to skillet and cook 5-7 min (until flaky; not raw)

mix chipotle pepper, lime zest and garlic powder with greek yogurt; set aside
-
heat tortillas over open flame or in skillet when fish is removed
-
assemble: season cooked fish with cumin, curry powder and lime juice; add ingredients to tortillas (chipotle yogurt, fish, tomato, avocado, cabbage and cilantro)
