Fish Tacos

Ingredients

  • olive oil

  • 2 corn tortillas

  • white cod/tilapia filet, large dice

  • half avocado, diced

  • roma tomato, diced

  • lime, zest and juice

  • 1 tsp garlic powder

  • small plain greek  yogurt

  • 1 chipotle pepper in adobo sauce, finely minced

  • cilantro, chopped

  • shredded cabbage

  • 1/2 - 1 tsp cumin (preference on measurement)

  • 1/2 - 1 tsp curry powder (preference on measurement)

  • salt/pepper

 

Directions

  1. heat skillet and add 2 tbsp olive oil

  2. season fish with salt/pepper; add to skillet and cook 5-7 min (until flaky; not raw)

  3. mix chipotle pepper, lime zest and garlic powder with greek yogurt; set aside

  4. heat tortillas over open flame or in skillet when fish is removed

  5. assemble: season cooked fish with cumin, curry powder and lime juice; add ingredients to tortillas (chipotle yogurt, fish, tomato, avocado, cabbage and cilantro)
