Chicken Adobo
Ingredients

2 whole chickens OR 5 lbs chicken parts

2 cups apple cider vinegar OR 1 cup malt/1 cup apple

½ cup soy sauce
-
1 bulb garlic rough chop
-
½ tbsp. pepper
-
10 bay leaves
-
Sprinkle granulated powder
-
Package annatto powder (mostly for color; don't worry if you don't have it.)
Directions

Marinate chicken in vinegar, soy sauce, rough garlic, garlic powder, pepper and 1 ½ TSP annatto powder for minimum

Remove chicken and pat dry (save marinade)

Brown chicken in dutch oven/braising pan

In pan, brown 6 cloves of garlic; add 1 ½ TSP annatto powder

Brown chopped garlic (6-7 cloves); add annatto powder.

Add brown garlic and marinade to dutch oven/braising pan with chicken
-
Simmer for 45-50 min until fork tender; serve with rice
